Chocolate Chip Oatmeal Cookies
We’ve said it before and we will say it again. We have the best patients in Kelowna! Often we our blessed with a delivery of freshly baked oatmeal chocolate chip cookies from one of our families. These cookies are extremely hard to resist and quickly devoured. I have kindly asked this patient to share the secret of these cookies with all of us!
This recipe will also freeze well if you only want to bake a few at a time.
Preheat oven to 350 degrees
Set aside:
2 1/2 cup organic oats (rolled or quick)
Set aside:
2 cup spelt flour
1 tsp Himalayan sea salt
2 tsp baking soda
3 tsp cinnamon
(Stir together)
Blend on med-high speed till creamy:
1/2 block of butter (1cup) softened to room temp
1 and 1/2 cup coconut palm sugar
2 tsp vanilla
2 eggs
ADD Oats and blend on low for 10-15 seconds
ADD Flour mixture and blend on low for 2 minutes
ADD 1 cup choc chips and blend on low for 10 seconds
Option add also 1/2 cup pumpkin seeds or other nuts or seeds.
Spoon out and bake. 350 for 10-12 min
