Blueberry Coconut Milk Ice Cream

Blueberry Coconut Milk Ice Cream:

This dairy free alternative to ice cream will leave your sweet tooth satisfied without the painful side effects that dairy can leave most people with.

2 Cups frozen blueberries
1 Can coconut milk (you wont use the whole can)
1/2 Teaspoon vanilla
Coconut sugar to taste

– Blend up blueberries in blender
– It’s best if you can use a refrigerated can of coconut milk, as this will solidify the milk and make the mix creamier and less watery; however, this is not necessary to the mix.  Scoop out the hardened coconut milk first and add to blender.  Slowly pour juice of coconut milk in blender until mix becomes creamy but not liquid
– Add vanilla and coconut sugar to taste

Enjoy this treat immediately!

You can also substitute another choice frozen fruit.  You can also buy fresh fruit, such as pineapple and dice it up to freeze in a bag.  This way you are sure of the quality of frozen fruit!
