Mini Onion Quiches

These mini quiches are a favorite at our home.  They are perfect to make in a big batch, freeze, and eat on the go.

3/4 c shredded coconut
4Tbsp butter coconut oil or ghee, melted
1 c chopped green onion
2 Tbsp butter, coconut oil or ghee
2 eggs
1 c whole milk or coconut milk
1/2 tsp sea salt
1/4 tsp pepper
1 c cheese, grated (I use cheddar)

-Preheat oven to 300•F
-Combine the coconut with the melted butter of your choice
-Press the coconut mixtures into the bottoms of a mini muffin tin. (I use liners to make clean up easier) -Sauté onions in 2 Tbsp butter for 10 minutes
-Cool opinions then sprinkle over coconut “crusts”
-mix eggs, milk, salt, pepper and cheese in a bowl or blender, then pour over mixture in tins.  Be sure to leave a little space for them to rise
-Bake for about 15-20 minutes, until egg is cooked through.
